My personal goals are to go back to school for my Masters, possibly in Library Studies or Biblical Languages.


Smokey is our playful pup, half chihuahua, half rat terrier he's a handsome dog, although very good with the children Smokey does have his issues!


Chexter is our roborovski hamster, over a year old he's recently started to nip a little!

Appetite: got hungry people to feed? what a crock! pot that is!!

I hope this post finds you all well.  I think crock pots are the best thing for new mom’s and old.  The mom that inspired this post is Eliza expecting her fourth!  Stop by homemom3′s blog to check out her story…   

I will teach you the easiest recipe to get you started and post a new one every few days…  I will assume you are feeding three or more people and have a large crockpot… obviously you have to adjust the recipe to your crowd.  Keep in mind that a crock pot is a great way to be creative so feel free to substitute, here are some guidelines.

You can use different types of meat: beef chunks for stew, large chuck roasts, bite sized chicken or fish.  You can also use different types of beans, preferably types that you do not have to soak (small white, split pea, lentils).  Please buy them dry in the bags versus cans.  Cooking beans in a crockpot is a super easy way to enhance your kids’ diet, not to mention they are cheaper and healthier!  TIP: keep spaghetti sauce or jelly jars, boil them out and dry thoroughly and you will have a nice, air tight way to keep your beans nice for display… they look VERY pretty.

For this first recipe I will use the beef chunks you can find already cut in packages to make it super easy.  So here are the ingredients:

2 – 3 lbs chunks of meat, large potatoes (5?), handful of carrots, some scallions, some onions, 1 cup of some type of beans, couple of stalks of celery, bouillon & seasonings (you could also use a 1/2 cup of rice if you think you’ll need the extra food)

The crucial step to crockpot cooking is the meat, you must sear the meat to seal in the juices or you’ll have lots of gunk scumming up your soup/stew. Huh? what?  get a frying pan, heat it, put some oil or butter (not too much), cook your meat on medium heat on all sides… throw it into the crockpot… put the onions and cook them so they wilt and pick up all that meat flavor… this will take a good 10 minutes to do on a lower heat.

Meanwhile you are chopping and slicing your other stuff (potato’s, carrots, celery) and throwing them into the pot, measure your beans, throw them in…

The next step is filling up with water, make sure you use water you would drink as you want your broth to be the best it can be.  Select your seasonings… you need some (2?) bouillon (choose cubes or packets), salt, pepper to taste, a bay leaf won’t hurt, herbs de Provence and/or any seasoning your family is used to.

Once you’ve got everything in, cover and put it on high for the first three hours or so, then you can keep it on high or low depending on your time frame.  I like to have everything in the pot by 11 a.m.  at the latest and we usually sit down to dinner by 5:30.  If you have it done earlier that’s fine too!  Keeping the top on there tight is crucial so it will not dry out/burn up, so resist the temptation to mess with it.

Now as Eliza has mentioned, kids may not be up to all this crock stuff.  So in addition to the usual bribery ( be prepared for at least three battles)… you could mention that cowboys love stews and soups.  Maybe you could watch a western movie or t.v. show like Little House on the Prairie, Ma’s always serving up a stew and everyone is eating it up.  Maybe even make it a theme night at your house… don’t forget to mention that Woody from Toy Story is a cowboy and I’m sure he’d love some stew (does your kid have this costume?).  Or maybe you could work it into the early settlers and dealing with the Native Americans, my son came home with a shield and hat he made at school in preparation for Thanksgiving.

When I first started, my son was about 3 and didn’t like soup, so I just strained and separated the different foods for him on the plate, he liked that and ate pretty well.  I hope these strategies work for you, keep at it, eventually they will come around and like it.  Don’t forget that living vocab - stock, broth… difference between stew and soup…

Keep your kids healthy this cold/flu season. Super Nanny ABC

This post was inspired by Gayla over at the Super Nanny site, take a look at the original post.  It seems this time of year, I feel the pressure to keep my kids healthy amidst the germ storms raging all around… school, church, Chuckie Cheese, germs are every where.

Some background info: My oldest (boy 2001) just started K this year, but I do have two years nursery school experience under my belt!

I agree, parents should teach their children the proper way to cough in public, what to do when they sneeze, etc… BUT…
I think that is only part of the problem, I think we as parents need to step up our mommy (forget about nannies) rhetoric in the cold/flu season.

**Wash your hands a LOT, enough soap and long enough – rinse completely in warm/hot water.  This is sometimes a problem for my 2 year old who does not want anything that is slightly warm on her skin.  Boy 2001 is more like me and loves hot water, so that’s not a problem.

**Eat lots of good foods, we call them “super hero foods” in our house – lots of soups with veggies, broth (my son loves to say this word) and BEANS! Every mommy MUST Own a slow-cooker!! It should be issued at the hospital with every baby hat & blankie set… and it should be on baby registries for real! Not to mention, well wishers could arrive with ziploc bags of food to give the new mommy!

**Hydrate non-stop!! Water, agua (Spanish), de l’eau (French), mizu (Japanese), teach them in different languages, that will keep them in the bathroom and keep the bathroom/wash hands cycle going!

I also am a big believer in garlic and onions! ok, now you’re thinking this woman has gone over the edge. I cook with LOTS of garlic & onion! It is my own personal theory that this not only helps with vampires but also with keeping colds away.  And of course, very little sugar seems to keep my kids happy all the way around.

How many shopping days left til Christmas?

I’m going with 38! I’m not exactly sure, because (pick one of these excuses)
a. I don’t have a calendar handy
b. too lazy to look it up online
c. can’t account for your motivation, should I count today or not, hmmm…

What’s your shopping list look like? I have no idea what to buy right now. I don’t want to spend money on temporary things, although all this material stuff is temporary AND I don’t really want my kids to associate Christmas with STUFF.

I’ve been buying and giving them and plan to keep Christmas pretty low key around here. Besides, it seems overwhelming to them when they get too much at one time.

Being last is in the past for me… I’ve turned over a new leaf and have been cleansing and putting make up three days in a row! Hooray for me! My husband even said, “you look nice”. Incredible, I know!

I want to do several things in the next few months!

I desperately want to save up enough money to take my kids and DH to New York for a week in January/February.

We would drive so that would not be too bad, it’s about 7 hours from where we live in Maine… but we also need…

1. money for a hotel
2. money for a parking
3. money for transportation in the city
4. money for meals
5. money for entertainment – I would love to take my older two to see Mary Poppins on Broadway! http://disney.go.com/theatre/marypoppins/

Blog Carnival: The thing I am most grateful for…

This is a post for the Blog Carnival on Mom Gadget

The thing(s) I am most grateful for this year are good health and prosperity. I’m just an old Star Trek girl at heart. At my core, I just hope to live long and prosper and I’ve done both this year.

This year we had Miss L come in April after an uneventful third pregnancy. We were officially launched into the land of minivans and were able to buy our Honada Odyssey which has been on our wishlist for 5 years. Miss L was 7 days late, but she came 8 minutes after we got to the hospital. My husbands breath still smelled like the tuna/mayo sandwich he was chewing on as he drove me there.

Miss N turned 2 and is on track with everything a two year old needs to do! She is mischievious and always into something but a sweetheart at the same time. I expect her to lead our singing trio, she’s got a great loud voice “Maaaaaaam”.

Little C started Kindergarten and is thriving with new friends and learning experiences equaling a party EVERY weekend for birthdays or special events.

Big B is on track with is MBA for 2007. I’m in line with this a new direct sales book venture and of course, BLOGGING!

All of the things I’ve described are possible because we are in good health and have enough money to make our lives relatively stress free.
